Abstract
The following research was aimed at the analysis of the chemical and microbiological adulteration of two samples of bovine milk; a bronca, from the municipality of Facatativá and an entire one, marketed by a chain store located in the city of Bogotá. To this end, physico-chemical and microbiological tests were carried out which are currently used in the dairy industry to assess milk quality. It was found that the density values obtained are lower than those reported by the normativity and that therefore whole milk and bronchial milk are only adulterated by water; which does not generate the development of pathologies in the people who consume it, but, because it contains fewer nutrients than those reported in the table of nutritional content, it does not fulfill the values expected by the consumer.Downloads
